My 18th Birthday!

Hey everyone! 😀

A few days ago was my 18th birthday…!! Frankly, that’s a little bit (lot) hard to believe. It’s crazy. Seriously, I feel like I should still be 14… 🤣 But I’m not, so moving on. XD

Here’s a recap of how my day went. 🙂

In the morning I worked on making my birthday dessert, a special new invention of mine – Rosy’s Famous Quadruple Layer Pumpkin Pie Extraordinaire. I hadn’t even made it before when I named it, so don’t ask how it was even famous. I wasn’t sure if it would work well when I was making it, but it turned out amazing!! The four layers were… Cream cheese, marshmallow, pumpkin pie pudding filling, and lastly, whipped cream!! Here are pictures of how I assembled it.

I made each layer from scratch, and it’s all completely healthy!!! (Except for the crust, in which I used real graham crackers.) 🙂 It was sooo much fun to make, and it turned out delicious!! 😋

For the meal, I chose a favorite of mine… Enchiladas Potosinas, which is probably unlike any enchiladas you’ve ever seen before.

You make corn tortillas with a red salsa sauce, and fill it with cheese, onions and salsa, and fry it. They’re kind of like quesadillas, but in a totally different league. They took almost all afternoon to make, but it was totally worth it.

This is the cheese mixture, and the corn tortillas dough.

I didn’t get get any picture of most of the making process, but basically we flattened the dough into a tortilla shape, fill it with cheese and folded it in half. Then we cooked them, and when they were all cooked… We fried them – a very important and in-excludable step. 😋

Here is the finished meal – featuring beans, avocado, and all the other stuff that you eat with enchiladas potosinas. It was so good!!! 😀


For my birthday, I got some yummy tea from my brother Andy, and make-up from my parents! (The tradition, is we get to wear make-up when we turn 18.😂)

That evening, my mom and a few of my sisters had a girl’s movie movie night, and watched part of Pride and Prejudice. It’s around 6 hours total, so we didn’t watch nearly the whole thing…!! It was a fun time!!


I had an amazing birthday, and I’m thankful to God for giving me another year of life – I’m excited to be 18! Thank you to everyone for the birthday wishes, and for making my day really special!! ❤️
